Infecting an Heir does 2 melee damage, then, if the damagee was a Character card, "that target" does a bunch more damage.  In our game, we had a situation come up where the 2 damage from IaH incapacitated a Hero Character.  Does that Character still do damage, even though it in no longer a "target"?

The Character would stop dealing damage as soon as they were incapped, just like a target would stop dealing damage when destroyed.

We had a game where the infected target was Greazer's hair, his vampiric hair then went on a rampage.

That one-shot where Greazer got too close to Wager Master and his hair became sentient, that was a great one.
